3TheKozakiregionhaslongsinceflourishedwithactiveresidence,whoboasttopossesstheoldestshellmoundinJapan.The“Nishi-no-joShellMound”issaidtobeabout9,000yearsold.Actually,theKozakiCastlewasbuiltnearthisshellmound.Itisbelievedavillageprosperedthereinancienttimesandtheyusedarichfoodsourcecalled“koji.”Inaddition,thisareaishometotheKozakiShrine,presumedtohavebeenbuiltmorethan1,300yearsago.Moreover,withinthisextensivehistoryofKozaki,sakeisnotedtohaveperhapsoriginatedhere.Ithasbeenmadesinceancienttimes,notonlyfordrinkingbutalsoasanofferingtothegodsandemperors.ThisdistrictthrivedmostduringtheEdoandMeijiperiods,whentheToneRiverwaswidelyusedfortransportation.Sinceagriculturalproductssuchasrice,soybeans,andgoodwaterqualitywereabundant,fermentedfoodslastedlonger.AndthesewereallactivelyproducedforbigconsumercitiessuchasEdo.Duringthepeakofproduction,asmanyassevensakebrewerieslinedthestreetsinanarrow500-meterradius.Herethebrewingindustriesofmisoandsoysaucedevelopedtoo,fillingthestreetswithnumerousstoresaroundtheriverbank.Thosesamesakeandsoysaucebreweriesstillexisttoday,fromabygoneera.Thankfully,carryingonwiththesamerichcomplexitiesintasteasbefore.Nishi-no-joShell MoundKozakiShrineCamphor Tree(Natural Monument)NabedanaCo.
